鳥取県東部発祥のB級グルメ「ホルモン焼きそば(ホルソバ)」。昭和30年代、牛ホルモンと野菜を味噌ダレで炒め。自家製味噌ダレが決め手のホルモン焼きそば。ぷりぷりのホルモンから溶け出す脂が麺に絡み、鉄板の香ばしさと合わさって食欲を直撃します。甘辛い味噌のコクが後を引き、屋台ならではの豪快さとライブ感が楽しめます。濃厚なのに不思議と重くない、計算された一皿です。
