Chef Waki and our Shinka kitchen team has created a new ramen that may be our biggest addition to our menu since our original award-winning Beef Bone Marrow ramen. Inspired by the birria tacos made popular on the streets of Queens and in SoCal, Shinka Birria Ramen is a rich beef ramen that starts with a marriage of our award-winning bone marrow broth and mexican spice braised beef. This international spirited ramen is then topped with bean sprouts, red onion, cilantro, radish, and sweet corn for a ramen like no other. When a famous Mexican slow-cooked stew meets Japan’s favorite noodle soup, you get a meal like no other. Birria and ramen in communion for a fusion meal hard to forget. Braised lamb shoulder is the star of the show here, garnished with bean sprouts, chopped red onions, sweet corn, radish slices and fresh cilantro leaves. Don’t forget to squirt some lime juice over your soup!
